is it normal for condensed milk to turn solid while in the can?
i opened it and it had the constistency of warm caremal squares. same color too. Can i still use it? If not, how much sugar should i put in evaporated milk to makeit like condensed milk?
Sweetened condensed milk will caramelize when exposed to heat. I have actually done so (in the can) when camping once. In terms of why a can would caramelize while in your pantry, I could not fathom a guess. The sugar content of SCM is very high and spoilage is rare, but I would not use that can. It certainly will not work very well in your dessert. Take it back to the market for a refund
You can make SCM from evaporated milk (or even regular milk)
The best make-your-own version is to mix 1 cup of evaporated milk with 1-1/4 cups of sugar in a saucepan, heat and stir until the sugar is completely dissolved, and let cool. If you don’t have evaporated milk on hand either, you can make your own by slowly simmering any quantity of milk in a pan until it reduced by 60%, and then adding the sugar.
